hey Beach Cottage ladies
I hope you are well, I am very good, as I type this the sun is shining, the Aussie sky is very blue blue blue and life is good.
So this is feel good comfort food and when I recently made this the sun was definitely not shining, in fact a storm rolled through the beaches last week, the surf was huge and what was required was a meal that could be thrown in earlier in the day, left to get full of the yummy flavours that make it work so well and dipped into by different people in this family at different times.
You see all week we had been on surf watch in our house and I was under no illusions that Thursday after school would see my big boy out in the surf and coming home ready to about eat the table.
I was so right (remember the vlog last week of the surf on the beaches, it was huge).

Along with that Mr beach cottage had been up and out driving a boat at 5.30am as part of the Biggest Loser TV program?and he had called me from the beach after a few hours cold, dripping wet from the rain and a bit miserable.
So, top mum and wife that I am broomstick firmly locked in the cupboard, I threw this together for those boys?and as usual, it went down very nicely?

There is no way when being offered this dish after 3 hours in the surf, you would believe that it was so very easy to firstly cobble together and secondly dish up.
This is the ultimate one-pot store cupboard meal. Whether or not you wish to divulge this secret to your budding surfers is very much up to you
this is just a recipe that works and the beauty of it is you can, should you want to fancy it up a bit should you want to utilize its ease when having friends over for supper
This is incredibly quick to make, tastes pretty special, and if you are at a push you can throw it together from things in your cupboard?indeed that is how it came about for me ? one of those meals that you make up as you go along?and one of those meals where I wanted to use up the cans of beans that seem, somehow, to magically grow on their own in my pantry
I have called this Crockpot but to be honest, I make this both in my crock / slow cooker and on the hob in my Dutch Oven?the hob version can easily be thrown together if you get in from school/work and everything is chaos?throw it in the pan, get on with all the other stuff and before you know it a one-pot meal will be waiting for you

1 x can tomato
1 x can cannelloni
1 x can chickpeas
2 medium onions finely diced
2 tsp jarred garlic or 2 to 3 cloves garlic
big bunch fresh herbs
2 tsp mixed dried herbs
dash vinegar
2 tbsp oil
250g bacon
2 1/2 cups stock
add onion and garlic to pan, soften 5 mintues in the oil
add the bacon & brown
throw in cans of beans and tomatoes, herbs
add dash vinegar
add stock & leave low 4/5 hours or high 2 hours
(or in on hob/stove for 1 to 2 hours)
serves with crusty bread & a glass of wine wouldn?t go a miss either
*beach cottage recipe notes if I am lazy or mother hubbardy I use garlic in a jar, and in the past have also used garlic oil which loses another step *smoked bacon would be nice here if you like that flavour, I don?t like smoked anything but I can see here it would give this a nice touch *for a more hungry crew add another can of beans *you can up the stock on this for more liquid and to be honest this pretty much always runs out so I guess 3 cups might be better anyway *I love to go heavy on the parsley in this, I just use whatever I have in the garden?mostly that?s a mix of italian herbs * throw in a glass of wine for a lovely flavor *a squeeze of lemon instead of the vinegar works a treat too ?*you can leave this all day on low, just throw it all in your slow cooker and leave but you may need to adjust the liquid content accordingly by adding more stock?
